Bottle Gourd Chutney Recipe (Lauki / Sorakaya Pachadi)

Bottle gourd chutney is a simple, healthy, and flavorful South Indian chutney made using fresh bottle gourd, red chilies, garlic, and tamarind. It is a great way to include nutritious vegetables in your daily diet.

This chutney pairs perfectly with hot steamed rice, dosa, idli, or chapati. The mild sweetness of bottle gourd combined with spicy red chilies creates a delicious balance of flavors.

Ingredients

  • Bottle gourd – 2 cups (chopped)

  • Dry red chilies – 6

  • Garlic – 6 cloves

  • Tamarind – small piece

  • Oil – 2 tbsp

  • Salt – as required

Step-by-Step Method

Step 1: Cook the Bottle Gourd

Heat oil in a pan. Add chopped bottle gourd and dry red chilies. Sauté on medium flame until the bottle gourd becomes soft and slightly cooked.

Step 2: Cool the Mixture

Turn off the flame and allow the sautéed mixture to cool completely.

Step 3: Grind the Chutney

Add the cooked bottle gourd mixture to a mixer jar. Add garlic, tamarind, and salt. Grind into a smooth or slightly coarse chutney based on your preference.

Step 4: Serve

Transfer the chutney to a bowl and serve with hot rice, dosa, idli, or roti.

Tips for Best Taste

  • Use fresh tender bottle gourd for better flavor.

  • You can add a small tempering (mustard seeds, curry leaves, and garlic) for extra aroma.

  • Adjust the number of red chilies according to your spice preference.

Shelf Life
